Friday 18th May

Everything is going really well at the moment. Excitingly. I went to fonda mexican last night with the best people in the world. And managed to conincidentally run into more friends. Lime & passionfuit margaritas, beautiful food and company was awesome. I got home late = no exercise for me. But I did walk to and from dinner, and all around the city during the day - so I’m calling it a win. In general my eating this week has been very good.

Work has been breezy today. (So breezy I’m writing this) and i’ll do some study till the end of my shift. I have a 21st tonight and the big awesome tumblr adventure tomorrow. So fingers crossed my good luck remains.

okay, a secret: I’m seriously nervous about this. Firstly, new people is sometimes a little traumatic. But when I already know they’re all awesome. And friends. What have I got myself into?

Carrot Cake Pancakes
Ingredients:
1 carrot, cut + partially steamed (or just raw if you’re in a rush!)
1 banana
1/2 cup egg whites
3 oz plain greek yogurt (1/2 small chobani container)
1 cup oats
1 tbsp wheat germ
1 tbsp flax
1 tsp vanilla
Spices to your liking (I used mostly cinnamon with some allspice, nutmeg, and ginger)
2 tsp stevia
Use a blender to mix everything together until it’s a smooth, even texture. Add water if its too thick (I used around 1/4 cup water) and blend it in. Then, pour out and cook on a non-stick pan or griddle with some olive oil.
Makes 10 (delicious) pancakes! Each one has 62 calories, 1 g fat, 3.5 g protein, and only 2 g of sugar.
There are good eaten plain, with some greek yogurt, sliced banana, maple syrup, walnuts, etc. Feel free to experiment :)
Personally, I would eat a few of these for breakfast along with scrambled eggs or oatmeal and some fruit!


I have a sleep in tomorrow, and I think I’ll make some of these for breakfast. They look amazing. But I’m thinking of adding bananas and removing the stevia/wheat germ/flax. Mostly because these things are not readily available to me. I’ll update you if it works!

An Excellent Day!

So:

  • Totally caught up with uni
  • Didn’t have to go to work
  • Finally did some exercise after a week off
  • Ate exceptionally well
  • Annndddd…. Spent a whole paycheck on a skirt. Whoops.

+ I’m seeing many of my favourite people tomorrow, It’s looking up.

I know, I’ve been MIA for ages, again. I’m such a bad blogger (would that be the term?).

In good news, on the 9th I did both finish my report and do Cardio. Score!

In bad news, after my final biochem prac my body collapsed to ground in a heap. I have been sleeping, coughing and wheezing my way around the house for the past 5 days. The combination of full-time work, full-time uni resulted in minimal sleep. plus my eating got a little lax. Feeling better now though, stocking up on superfoods in the hope that I can workout tomorrow (and not scare people away with my coughing).

Wed 9th May

I can’t even post something everyday? Though truly, I spent about 10minutes total on both my laptop and phone yesterday. So, so busy. I did however do a legs workout (yesterday) and they are so sore today.

I’m planning to do some light Cardio once I finish my report. Any secretly brilliant biochemists out there that can teach me how to calculate fractional charge?

Also, anyone know what’s with all the spam in the fitspo tag? I’m scared to click on it again.
